According to US Standards, rolls and buns are the items that weigh less than 227 g while loaves of bread are those items that have net weight exceeding 227 g.

Hard Rolls: The word “hard” implies that the crust of the finished product is hard to touch. Hard rolls generally have a tougher, chewier crust compared to soft rolls. Sometimes “crusty rolls” is the term used for hard rolls.
Soft Rolls: Soft rolls are small, soft and tender products. They may be the same size and shape of hard rolls but taste and crust of soft rolls are different than hard rolls. Soft rolls have sweeter taste, thin soft crust. In addition, soft rolls are tender and easier to chew. Processing techniques of soft roll and hard roll is different. Soft roll products contain higher levels of sugar, shortening, yeast and water than hard rolls.
Hamburger and Hotdog Buns: Hamburger and hot dog buns generally have the same formulation, but different in shape. The hamburger bun is round about 8.9 to 12.7 cm in diameter; the hot dog buns are rectangle about 12,7 cm to 15,3 cm in length. There are also some long hot dog buns like 16 or 18 cm in length as well. Both types of buns are about 3.8 cm high.
Dinner Rolls: Dinner rolls are the soft and small roll bread served at meal times. Dinner rolls are different than hamburger rolls in terms of shape and taste. There is no standard in terms of shape and taste. The baker is free to develop his/her own recipe and he can use his creativity for making dinner rolls like using sesame, cheese, sunflower seeds, onion or rye etc. [Science of Baking, 3]

Simits are closely related to bagels and in fact an authentic simit is made in the same way as a bagel, poached in a boiling water before being sprinkled with sesame seeds and baked.
